Pasta di meliga

 

La ricetta della pasta di Meliga proposta da Buono Come il Pane è frutto di una tradizione familiare e popolare che ancora oggi conserva il suo genuino sapore e semplicità. Una ricetta che la nonna del titolare preparava quando il Vescovo faceva visita alla città. La ricetta è rimasta la stessa: burro, zucchero, granoturco macinato e setacciato, uova, scorza di limone per un impasto morbido da cui ricavare dei biscottini friabili e gustosi.
La farina di mais utilizzata è prodotta con la qualità “ottofile” coltivata in Alta Langa. La meliga Ottofile, detta anche meliga del Re, è un prodotto naturale e consente agli agricoltori di riseminarla, cosa impossibile per i mais ibridi o transgenici. La macinazione lenta a pietra permette di produrre una farina che contiene anche il germe e la fibra alimentare della meliga.

The recipe of the dough Meliga proposed by Buono Come il Pane is the outcome of a popular family tradition that still maintains its genuine flavor and simplicity. A recipe that the founder’s grandmother used to prepare on the occasion of the Bishop coming to town. The recipe has been kept unchanged: butter, sugar, grounded and sieved corn, eggs and lemon zest, that result in a soft dough from which to obtain the cookies crumbly and tasty.
The corn flour used is made with “ottofile” kind that is grown in Alta Langa. The Ottofile corn, also called Corn of the King, is a natural product and may be replanted, impossible thing to do with maize hybrids or genetically modified seeds. The slow grinding stone allows to produce a kind of flour that also contains the germ and the dietary fiber of corn.
